Family ties

With a child with type 1 diabetes, we are even more aware of how foods effect us all differently. He started to prefer low carb and so to help him avoid frustration with our new way of life, I always try to find and make new and different recipes or overhaul classics to be tastefully healthy. Over the years, I’ve tried lots of different ways to cook, meal plan, preserve and teach my family how to cook our favorites. And during that same time health challenges have changed all of that, over and over again!

We’ve chosen to eat more low carb based partly on a type 1 diabetes diagnosis but that’s not the only reason. Low carb doesn’t have to mean low taste. When I hear people are eating low carb, or have gestational diabetes (like I did) or type 2 diabetes, I want to make them something sweet and fun to remind them food is still fun. Don’t give up on what you put in your body. It fuels not just your energy but your mind and attitude as well.
